Reflections + recent happenings

If I was giving in to my nagging inner critic paying its usual Sunday afternoon/evening visit to my brain I’d now settle into a reflection of my shortcomings in the week just ending. Yet – today is different. Granted, this is my fourth attempt at writing this intro so much to my dismay I did allow negative thoughts to flow out on paper/a blog draft page. What keeps me from going with it is the book I finished earlier today. A book that- and as exaggerated as it might sound – profoundly changed me. The way I see the world and life. Honestly, if people in this day and age call bread or pancake recipes life-changing I might as well say this about a book, no?
As is the nature of the  human brain I’m sure the self-critical voices won’t just disappear. Hence why I need to constantly remind myself of the messages this book planted into my head and why I’m definitely going to write a review of it. Not today, though, as it’s not the Book in Review but a Week in Review. Plus, my mind is still taking time to process and sort through the many thoughts and feelings evoked by the story.

Onto the positives and the point of Meg’s Week in Review: giving ourselves credit for what did go well in the past week. One overarching theme of it seemed to be – and I may or may not am choosing this with the current situation in the US in mind – one of female power. Read: my dad was on vacation allowing for some more one-on-one time with my mum and my male boss had a full week of working from home which meant the office was ladies’ business, too. This all made for a [as much as busy days allow it] relaxed atmosphere.  Sorry, guys ;).

Week in review

In the past seven days I …

Worked. Not a full five days thanks to a weird mix of stomach cramps [outside the regular cycle if you know what I mean] and sudden sickness throwing me off and making work impossible after not even an hour in the office on Wednesday. I stayed longer on and put an extra effort in to catch up on all the paperwork on Thursday which calmed my mind about the missed day.

Napped for a solid 1 1/2 hours on said sick day. I originally hoped to just lie down without actually closing my eyes and return to work but my body thought differently. I did feel the refreshing effects of the nap, though, so clearly needed it.

Had a great conversation with my boss and colleagues. We don’t get to sit together and chat like this on the regular so it was a wonderful opportunity to connect and talk about everything. Our male boss was on vacation this past week which allowed for some lady talk, too.

Cooked lunch for my mum and me on Saturday. This was something I’d been meaning to do for ages already and we finally found a time and day working for both of us. It turned out to be everything I’d hoped for and more. The food was delicious and the conversation meaningful. We had Semmelknödel – a traditional German kind of dumplings made from bread rolls, fried onion, parsley and a few other ingredients; egg-free in my version – with oriental-spiced Sauerkraut. It’s one of my favourite dishes yet due to its slightly more involved preparation not a regular one on the menu. The terrible lighting in the picture does the delciousness of the Knödel and Kraut no justice. That’s what we get for delaying lunch until 6.30 on the weekend …

Started and finished the book mentioned in the intro. The review might not come up until the following week or so because it stirred up so many thoughts in my mind.

Bundled up and took a longer walk with my mum on Sunday afternoon. Much needed as I was in a slightly Sunday blues once again and also needed to at least get some of the questions and thoughts about the book I’d just finished out. Walk with mum + deep conversations = one of the most blissful activities in my life.

Prepared another batch of peanut butter as the previous was gone surprisingly fast. I don’t know how that might have happened 😉 …

Posted twice: a week in review with some thoughts on happiness and yesterday’s good good links.

Spontaneously went to the cinema on Friday night. Okay, not entirely spontaneous as I’d originally planned to go with a friend in anyway. Yet she’s dealing with a lot in life lately and asked me if we could postpone our movie night again. Fingers crossed she’ll be able to make it this week. Either way, my mum had plans of seeing La La Land and I decided to tag along though it hadn’t been on my list of movies to watch. Verdict: sweet. I was a huge fan of all the dresses – just my kind of clothes -, the music and dancing. So if you considered adding it to your cinema list: go for it!

Healthy No-Bake Millonaire's Shortbread - gluten-free, vegan and only eight ingredients!

Granted, I was hesitant to join in a virtual Thanksgiving celebration. As you might know this is a holiday not celebrated in Germany. We do have the occasional ‘Erntedankfest’ [which literally translates to Thanksgiving] but it’s nothing official and I don’t know a single person honoring this day at their home. Anyway, I figured every holiday feast needs dessert and that I could do. Allow me to present: Healthy Millionaire’s Shortbread.

Way different from my recent flourless hazelnut shortbread this is it. The kind of treat you’d whip up for a holiday or take the time to really savour on an ordinary day. Funny story: my first time trying this British classic was as a special Britain-themed week at Lidl [for those not familiar with it: a discounter] of all places. Very gourmet, I know. [Read: not.] I got my whole family obsessed with these caramel-topped and chocolate-covered slices of decadence. For some reason Lidl stopped carrying the shortbread during future British weeks despite them clearly being a popular item and gone very quickly every time.

But we wouldn’t be bloggers if we let stores decide our food choices, right? Given my ‘history’ of no-bake brownies and bars it’s a riddle why I’d yet to try and recreate the Millionaire’s Shortbread. Luckily, I did after all and – dare I say it?  – these are even better. Buckwheat and cashews are combined with a special ingredient to create the gluten-free shortbread crust here: cacao butter. I just wanted to see if I could use it instead of coconut oil, not expecting anything. But: wow! The cacao butter, despite using a small amount only, lends a truly buttery taste to the shortbread base. Naturally sweet date caramel stands in for the typically sugar-laden variety. My favourite chocolate ganache finishes everything off for an amazing taste experience.

Whether it’s Thanksgiving, Christmas or just an average day when you’re reading this: Make this Healthy  No-Bake Millionaire’s Shortbread and be sure to have everybody get back for seconds.

Healthy No-Bake Millonaire’s Shortbread

Shortbread base:

  • 1/4 cup [40 g]  raw buckwheat groats
  • 3/4 cup [100 g] cashew nuts
  • 1 heaped tbsp/25 g cocoa butter, melted [can sub coconut oil]
  • 1 tbsp maple syrup

Caramel

  • 1 cup [150 g] dates
  • 1 heaped tbsp of peanut butter [coconut butter works, too]
  • Pinch of salt [omit if your nut butter is salted]
  • 2-3 tbsps water

Ganache Topping

  • 2 oz dark chocolate
  • ¼ cup + 2 tbsps coconut cream or soy cream [~ 75 ml]
  1. In a high speed blender or food processor, blend the cashews and buckwheat groats into a fine flour-like consistency.
  2. Add to a bowl and mix with the melted cacao butter, kneading to form a dough. Press into an 8 x 8 inch pan and set into the fridge to harden.
  3. Prepare the date caramel by processing the dates in your blender until crumbly, Add in the nut butter, minimum amount of water and salt and process into a smooth caramel.
  4. Spread the caramel onto your ‘shortbread’ crust and chill in the fridge again.
  5. While the base is chilling in the fridge, prepare your ganache layer. Finely chop the chocolate bar and set aside.
  6. Bring the coconut milk to a boil either on the stove or in the microwave. Pour over the chopped chocolate and (!!!) let sit for three minutes. Do NOT stir before.
  7. Stir to fully combine all ganache ingredients. Top the chilled base with ganache and refridgerate for at least 45 minutes before cutting into it.

Happiness-inducing today: Music. It’s been an ugly grey and rainy day. Stressful with some anxiety thrown in, too. But setting out for short walk after work, just catching some fresh air and listening to brighter tunes helped a little.

No-bake Peanut Butter and Jelly Chocolate Fudge Bars

Using only five simple ingredients these no-bake peanut butter and jelly chocolate fudge bars are a healthy vegan and gluten-free snack or dessert. The rich topping makes them irresistible.

What. a. name. Yes, I’m aware it’s a mouthful to read and say but I promise they’re deserving of every single letter. In other words: SO good. Inspired by Ronan Keating I’m tempted to say that regarding these bars it’d best to say nothing at all [and let the picures do the talking]. Or nothing but: yes, you want and need these in your life. Unless you happen to have a peanut allergy, tnat is. However, if you knew me you’d also know I’m not good at saying nothing at all.

The making – or rather: naming – of these bars unexpectedly became an educational matter. Story time: when I first made these No-Bake Chocolate Fudge Brownies and brought them to work I had to learn that one of my colleagues is allergic to nuts the worst way. Think: she ate one and asked me mid-bite if they might contain nuts. I felt so sorry despite her not blaming me. Here’s the deal: nut allergies are by far not common around here. Peanut butter bans in schools? Unheard of.

As I felt sorry for my colleague missing out not only on the brownies but these blondies, too,  yet was on a roll with the no-bake bars I did some research. Peanut is my favourite kind of ‘butter’ and not actually a nut* but a member of the legume family. Wait … Wouldn’t these bars be nut-free using peanuts?  Long story short: I decided against labeling them as such to avoid confusion but happily learned they were suitable for my colleague.Nut allergies are somehow fascinating – though obviously a huge bummer for those suffering from them – in how much they differ from person to person.

*Honestly, as much as I like legumes – both the word and the food group – peanuts will forever be nuts in my heart.

Okay, back to the bars. Do you prefer brownies or blondies? If we were looking at the baked variety I’d always be team brownie. But with these no-bake slices I’ve found I slightly prefer the blonde version. It’s the same with bars: dried fruit mixed with cocoa simply isn’t my favourite. Not bad enough to skip out on the brownies but … And really: who can resist dates mixed with peanut butter? It’s such a good combination. Studding this base with the diamond-like-looking cranberries and adding a rich and creamy chocolate topping takes the deliciousness to another level.  Peanut butter and jelly isn’t a classic over here but I’ll make it one for those around me – with these bars. Family-approved, colleague-approved and, well, unsurprisingly approved by my stomach, too. PB & J, you’re here to stay.

The cranberries might not be a typical PB & J add-in but they really add a little something-something to the soft & salty peanut butter-y base and amazingly rich and creamy fudge topping. Feel free to use dried cherries in their place for a more authentic taste but I’ll say you’re missing out. A little ;).

No-bake Cranberry Peanut Butter Chocolate Fudge Blondies

100 g soft dates
130 g roasted + salted peanuts
1/4 cup [30 g] of dried cranberries

100 g dark chocolate [70 % cocoa or higher]**
1/2 cup of full-fat coconut milk OR full-fat non-dairy creamer [I used soy]

  1. Place peanuts in a high-speed blender or food processor. Pulse until ground to your preference – either finely ground and flour-like or with a few more roughly chopped pieces for texture*. Remove from the blender and set aside.
  2. Process dates until finely chopped/close to paste-like. Remove from food processor.
  3. Add nut meal back to the food processor, turn it on and slowly add the date mixture bit by bit, processing until a thick dough forms. You might want to stop in between, pushing the dates sticking to the sides of the blender/food processor into the blades and stop in between to prevent overheating.
  4. Firmly press the nut and date mixture into an 8 x 8-inch pan. Press the dried cranberries firmly into the blondie base and put into the fridge to harden [it will be very sticky and soft].
  5. While the base is chilling in the fridge, prepare your ganache layer. Finely chop the chocolate bar and set aside.
  6. Bring the coconut milk/non-dairy cream to a boil either on the stove or in the microwave. Pour over the chopped chocolate and (!!!) let sit for three minutes. Do NOT stir before.
  7. Stir to fully combine all fudge ingredients. Top the chilled base with ganache and refridgerate for at least 45 minutes before cutting into it.

Notes:

*As the roasted peanuts tend to turn into nut butter faster than other nuts you have to be careful not to overblend.

**use sugar-free or stevia-sweetened for a refined sugar-free version.

Keeping up the conversations.

Some things I will never learn. Okay …never say never so: some things will take a little longer for me to learn and act on. Like writing my Weeks in Review earlier or at least taking notes not to miss too much.

Do you believe in destiny? I do. It wasn’t apparent to me how destiny heard my wishes outlined in my previous WiRand delivered until I sat down to write this post. Meg, you keep inspiring me in ways you probably didn’t think of when creating your link-up.
Socializing might not have happened in just the way I’ve been longing for but I felt more connected with others than in previous weeks. I might be an introvert but a hermit I am not.

Week in review

During the past week I …

Worked five long days again. One of them presenting me with a huge challenge. Here’s the hopefully short story: I do a lot of the background work that nobody sees right there. As one of my colleagues was off on Friday I had to sub in for her at the reception desk. Oh my. Never underestimate what other people do. I’d known she was busy before but this was a whole new level of busy to me. Not only did I get more direct customer contact – yes, please!- but had to juggle taking up calls along with my usual responsibilities. Add in an emergency client and things got [not so] funny. Looking back now I’d do it again because I liked being around more people than usual but it was beyond stressful for a day.

Attended a dinner with all of my colleagues plus two new ones not yet working in the office on Tuesday. Truth: I wasn’t sure how it’d go and dreaded it a bit. Not because I don’t like my colleagues but worried I wouldn’t be able to actually connect and keep up conversations – still a fairly new member of a team that’s been working together for ten+ years. In the end, it was a little long for my preferences – four hours the night before a work day is out of my comfort zone. Yet I was able to bond more with some colleagues, lead interesting non work-related conversations and prove to myself that challenges can be overcome. By just letting go a little and allowing life to play out. Easier said than done.

Published only two insteadof the promised three posts. I was excited to share the recipe for these bars yet technology pulled a Meghan Trainor on me. Now the internet is up and running – albeit slowly – again and hopefully will keep up doing so.

Lead a good albeit short conversation with a new client at work. He only speaks English so as I was working on the reception desk I took advantage of the opportunity and we had a chat beyond small talk. Anybody else not a fan of the latter?

Noticed some pain in my right leg – again, dang it! I’d really hoped it had healed for good after the past years rest and physio therapy  – and took it easy on the workout side. Even easier, I should say. It’s hard to become aware of your limitations and act on them when you’d actually rather rush and jump around. But in the end I’m grateful for all the things I can still do. Like this Blogilates workout. All I’ll say is: jello arms. And here I was going to skip that part thinking it’d have no effect in anyway.

Made another batch of peanut butter. Which means I finished that previous one in just a week. Wow … let my mind process that for a bit.

What I discovered once again in the conversations I had at the restaurant is how deep my passion for language and reading runs. Not necessarily a new discovery but noticing how ridiculously excited I got talking about books and words made me realize I need to hone this passion more again. Reading and writing blog posts is great and I’m not going to stop doing it. Yet I think my mind would benefit from doing more of this offline, too. Maybe a little June goal?

Week in review: Peanut butter and family time.

Sometimes writing intros is hard because my brain won’t bother churning out any ideas. And sometimes it’s hard because there are too many thoughts. Especially after the past few days had me reflect on many things in life and changes I want and need to make. My head is spinning with thoughts but since I prefer to keep these Weeks in Review on the  light[er] side and also don’t want to serve you half-digested brain meanderings I will keep them churning for a little longer. Let’s chat about the past week instead – and by that I mean I want to hear about yours, too. Give yourself some credit for all you do every week. Even if – like for me on many occasions, too – “just the usual”. Done is done and you deserve that pat on the back. Thanks to Meg for hosting once again.

Week in review

  • Worked five days again with Friday feeling never-ending. My exhaustion on this day felt awful in the moment but made me realize I need to take certain steps to prevent it happening again in the future. I’m aware this is cryptical but I’m honestly not sure about my real plan of action here, either.
  • Cleaned my entire apartment including the rooms I never use [to be called the the dust collectors from now on …] it’s too big for one person – for our guests arriving on Thursday/Friday. It’s another holiday weekend over here and one where the majority of the family on my mother’s side visits every year. As much as I like my family I will admit  having that many people around is not the easiest for an introvert like me. Verdict after this weekend: I need a lot more practice.
  • Meal-prepped for a few days and prepared breakfast the night before Sunday through Thursday. I still need to get [a lot] better about this.
  • Made a huge mess in the kitchen when preparing my no-bake vegan fudge brownies on Saturday  [base] and Sunday  [fudge layer] plus a little recipe experimenting [gone right taste but wrong texture-wise]. Meaning two days of cleaning the kitchen again. As much as I enjoy cooking and baking I don’t deal well with seeing chocolate, cocoa and various liquids [honey …] spilled around. It’s giving me the heebie-jeebies and my head really needs to get used to it. Maybe more recipe creation would be a good shock therapy ;)?!

  • Interrupted writing this post to  a) gather my family’s clothes drying outside when the sun switched over to a heavy downpour all of a sudden and b) tidy my parents kitchen quickly as my dad was expecting guests. I’d say he owes me a favour now. Doing my laundry, maybe ;)? Thinking about it I’d already appreciate the internet working properly. My tech-genius brother was/is [as I’m writing this] around for the weekend and has been figuring out the why to our current problems with it,
  • Had a good old sing-along and dance party in my kitchen while preparing the above. Note to self: do this more often. It even sparked a potential post idea [that I should really scribble down after finishing this post lest I could easily end up forgetting it] – I’d call that a win-win situation.
  • Skipped my already non-intense pilates workout on several days. While not exercising to deserve food anymore I still find allowing myself full rest hard. One [rainy] day I’ll [be able to] sit on my butt watching movies, talking and eating good food with even better company like other people do, too. One day …
  • Possibly the most exciting kitchen action of the week: Making my own peanut butter for the first time. Why didn’t I dare to way earlier?! Okay, I know why: my constant fear of breaking my Vitamix. But seriously: it’s so easy yet so amazing. Only I wish I was able to find no-oil-added peanuts. Because I want my nut butters to be just nuts, maybe salt but nothing else. My family still enjoyed their PB & Js and I can’t deny enjoying many spoonfuls as is. Sometimes you just need the “bad” PB.

Took a million and one pictures of my nephew. But obviously spent even more time with him without the camera separating us. A million pictures are worth nothing if we didn’t actually make the memories they’re capturing.

My evening walk – nobody else felt like joining me – including gorgeously sun-flooded views and an amazing frog concert. Those little guys were seriously singing their hearts out [just for me].

A weekend of traveling in food, rants and recovery rambles

Long time no talk or so it feels. Not to wish any days away but rather, I’d like to rewind to the weekend right now. I already alluded to my plans for it ever so slightly in Sunday’s post but today’s the day to talk about it a little more. Because while I can’t actually turn back time and experience it once more there’s a least the chance to use What I ate Wednesday and Vegan Wednesday to reflect back on the good food eaten.

As if I wasn’t snack-savy enough already train journeys bring out that side of me even more. Yes, tell me about how boredom eating isn’t healthy but you can’t deny that a journey of ~ six hours can get quite tiring and require some fuel. Even if most of the time is spent sitting and trying to ignore the annoying part of your fellow travellers. Dear parents, I know you think your children are the cutest ever but other people would agree much more if your little ones weren’t throwing fits in what  is a designated ‘silent’ wagoon. Okay, rant over. At least this way the attention was elsewhere and I got to snack on my favourites without any unwanted stares. Not that a stranger igiving me the looks would keep me from eating peanut butter on the train, though … Why, yes, I did. With a clean spoon I brought myself.

And while I’m not usually into fake meats traveling has always been an exception to rules. Traveling down memory lane for a second here my mum would buy Müller split pots, mini sausages [back then not vegetarian], overly sweetened yogurts and other elsewise deemed unhealthy fare. Oh the joys! These days, I don’t miss  most of these foods. The snack sausages, however, have made a comeback – vegan, obviously. I’m not sure if they actually taste like meat because it’s been more than a decade since my last taste of it but they are a decidedly spicy and savoury snack in their own right.

Breakfast on the day I travelled was another bowl of savoury oatmeal. It’s still a favourite going strong and I don’t see myself changing it up too soon. Aside from the break while at my cousin’s house. Oatmeal, yes, but savoury? That seemed a little too unsual – yes, I admitted it – for the one full day I spent there, though.

In case you’re wondering about lunch on Friday: it was the assortment of snacks pictured above plus some oatmeal I’d brought along on the train. Or that part of oatmeal that didn’t spill … fail.

Dinner that night … was the biggest challenge but also proudest [recovery] moment for me. Like I mentioned above I was hungry despite sitting for hours prior to my arrival at my cousin’s house. Originally, I’d expected her to be the classic bread-and-spreads for dinner person but she greeted me saying a hot dinner was waiitng for us when she picked me up at the station. But then I gave myself an inner mini pep talk because: What’s the point in sticking with the dinner you can eat every day if you get the chance of expanding your tastebuds with a dinner … ? Needless to say, I decided to face my fears [and yes, writing it out makes me feel ridiculous] and eat.

Long story short: my cousin – about 95 % vegan and talented in the kitchen – had prepared a vegan stir-fry made from cauliflower ‘rice’, red cabbage, carrots and other vegetables fried in sesame oil and spiced with a generous amount of fresh ginger – delicious! Sides were brown rice [the best kind], a tahini sauce and fresh mango. Literally one of those dishes you can’t stop eating – and I didn’t. What’s even better is that my cousin used a [new-to-me] blogger’s recipe – so I can have it again at home. A winner for sure.

While I try to keep recovery posts to a minimum here for a few reasons this one was worth mentioning: my cousin – knowing about my ‘issues’ with food – commented saying she was surprised by how much I ate. Anybody in recovery will relate to the fact that’s one of those things not to say to people in recovery but this time I actually took it as a compliment. Traveling and eating food prepared by others are sadly still struggles for me. Yet this little weekend getaway proved all is not lost and I can work my way out and up there again.

… and I obviously ended the night on some chocolate. [recycled picture, though].  Because that’s another one of those habits I don’t see going anywhere soon.
